01 - 1 cup packed light brown sugar
02 - 2 cups grated apples
03 - 4 large eggs

05 - 2 teaspoons baking powder
06 - 1 cup vegetable oil
07 - 1/2 teaspoon salt
08 - 2 cups grated carrots
09 - 1 teaspoon ground cinnamon
10 - 1/2 teaspoon ground nutmeg
11 - 2 cups all-purpose flour
12 - 1/2 cup chopped walnuts (optional)
13 - 2 teaspoons vanilla extract
14 - 1/2 teaspoon baking soda
15 - 1/2 cup unsweetened shredded coconut (optional)

16 - 1 teaspoon vanilla extract
17 - 1/4 cup powdered sugar
18 - 8 ounces cream cheese, softened
19 - 1 cup chopped fresh apples (for topping)
20 - 1/2 cup unsalted butter, softened
21 - 1-2 tablespoons milk (if needed for consistency)

# Instructions:

01 - Heat the oven to 175°C (350°F) and prepare two 9-inch round pans by greasing and dusting them with flour.
02 - In a mixing bowl, stir together cinnamon, nutmeg, salt, baking soda, baking powder, and flour.
03 - Using a larger bowl, mix the brown sugar, granulated sugar, and oil. Add eggs one by one, then stir in vanilla.
04 - Slowly pour the dry ingredients into the wet ones while stirring. Once mixed, fold in coconut, chopped walnuts, apple shreds, and carrot shreds.
05 - Split the batter evenly into the prepared pans. Let them bake for 25-30 minutes until a toothpick comes out clean when poked in the center. Cool in the pans for 10 minutes before transferring to wire racks to cool completely.
06 - Whisk the cream cheese together with the butter until smooth. Add powdered sugar bit by bit, then mix in the vanilla. If it feels too thick, splash in milk a little at a time until it's just right.
07 - Spread the frosting onto the cooled cakes, stacking them on top of each other. Sprinkle diced fresh apples over the top for decoration.
