Carrot Cake Squares (Print Version)

# Ingredients:

01 - 1 1/4 cups whole wheat flour
02 - 1/2 teaspoon baking soda
03 - 1 teaspoon ground cinnamon
04 - 1/4 teaspoon salt
05 - 1 1/2 cups shredded carrots
06 - 1/4 cup maple syrup
07 - 1/4 cup almond milk (any plant-based milk works)
08 - 1/4 cup unsweetened applesauce
09 - 1 teaspoon vanilla extract
10 - 1/4 cup roughly chopped walnuts

→ For the topping

11 - 1/4 cup thick coconut cream
12 - 1 tablespoon pure maple syrup
13 - 1 teaspoon vanilla extract

# Instructions:

01 - Heat your oven to 350°F (175°C). Cover an 8x8-inch pan with parchment or grease the sides.
02 - In a big bowl, toss in the carrots, flour, cinnamon, baking soda, and salt. Mix them together.
03 - Grab another bowl and stir together the applesauce, almond milk, maple syrup, and vanilla.
04 - Pour your wet mix into the dry mix. Stir it all up until it looks like batter.
05 - Gently mix in the walnut pieces, if you're using them.
06 - Dump the batter into the pan and smooth it out as evenly as you can.
07 - Pop the pan in the oven for 20–25 minutes. It's ready when a toothpick slides out clean.
08 - While the cake bakes, whisk the coconut cream, maple syrup, and vanilla in a bowl until smooth.
09 - Wait for the bars to cool all the way before spreading the coconut topping over them.
10 - Slice the frosted bars into squares and enjoy!
