Heat your oven to 350°F (175°C). Cover an 8x8-inch pan with parchment or grease the sides.

In a big bowl, toss in the carrots, flour, cinnamon, baking soda, and salt. Mix them together.

Grab another bowl and stir together the applesauce, almond milk, maple syrup, and vanilla.

Pour your wet mix into the dry mix. Stir it all up until it looks like batter.

While the cake bakes, whisk the coconut cream, maple syrup, and vanilla in a bowl until smooth.
