Cheesy Potato Pancakes (Print Version)

# Ingredients:

→ Potato Pancake Dough

01 - 4 big potatoes, boiled and peeled
02 - 1 egg, large
03 - 1/2 cup plain flour
04 - Salt and pepper as needed

→ Filling

05 - 1 pound of ground beef
06 - 1 small onion, chopped finely
07 - 1 teaspoon garlic powder
08 - 1 teaspoon paprika
09 - 1 cup of shredded cheddar or mozzarella
10 - Salt and pepper, adjust to taste

→ Cooking Oil

11 - 3–4 tablespoons of any vegetable oil

# Instructions:

01 - Warm up some oil in a pan, cook the onions until they're soft. Toss in the ground beef and let it brown completely. Stir in paprika, garlic powder, salt, and pepper. Pull it off the heat, and mix in shredded cheese once it's cool.
02 - Mash the boiled potatoes until smooth and lump-free. Mix in the egg, flour, and a pinch of salt and pepper. Keep stirring until you’ve got a doughy texture.
03 - Scoop out a bit of the potato blend, spread it out in your palm. Add some of the beef mix to the middle, fold the edges over, and press gently into a patty shape. Do this for the rest of the mix.
04 - Heat oil in a skillet over medium heat. Fry each stuffed patty for about 3–4 minutes per side until they’re crispy and golden brown.
05 - Serve them while they’re warm. Sprinkle some chives or parsley on top, and pair with sour cream or any dip that you like.
