In a large mixing bowl, toss in your grated onion and potatoes. Crack in the eggs, sprinkle over the salt, pepper, and flour, and give everything a good mix until it comes together.

Turn on your cooktop to medium heat and drizzle a little oil in the skillet. Scoop in some potato mix, flattening it lightly to form a patty.

Let the patties brown on one side (about 3–4 minutes), then flip them to crisp up the other side for the same amount of time.

Keep cooking with the rest of the potato mix, adding a splash of oil if needed to stop sticking.

Dish them up nice and hot! You can top them with sour cream or a dollop of applesauce, if you'd like.
