Golden Potato Pancakes (Print Version)

# Ingredients:

01 - 2 big eggs
02 - A small onion, grated finely
03 - About 900 grams of peeled, shredded potatoes
04 - 4 tablespoons of plain flour
05 - 1/2 teaspoon ground black pepper
06 - 1 teaspoon regular table salt

# Instructions:

01 - In a large mixing bowl, toss in your grated onion and potatoes. Crack in the eggs, sprinkle over the salt, pepper, and flour, and give everything a good mix until it comes together.
02 - Turn on your cooktop to medium heat and drizzle a little oil in the skillet. Scoop in some potato mix, flattening it lightly to form a patty.
03 - Let the patties brown on one side (about 3–4 minutes), then flip them to crisp up the other side for the same amount of time.
04 - Keep cooking with the rest of the potato mix, adding a splash of oil if needed to stop sticking.
05 - Dish them up nice and hot! You can top them with sour cream or a dollop of applesauce, if you'd like.
