Sprinkle gelatin over 1/4 cup water in a small dish. Leave it alone for about five minutes until it swells up.

Combine the last 1/4 cup water, sugar, corn syrup, and salt in a medium pot. Heat on medium, stirring every now and then, until the sugar's dissolved.

Clip a candy thermometer to the pot, let the syrup boil, and keep it going until the thermometer hits 240°F (115°C). This takes somewhere between 7-10 minutes.

Pop the dish with gelatin into the microwave for 10-15 seconds to liquefy it while you wait on the syrup.

Carefully pour the hot syrup into a stand mixer holding the melted gelatin. Start mixing slowly, then turn it way up and beat for 10-15 minutes until it's super thick and airy.

Add the pink food dye, vanilla, and cotton candy flavor. Mix just until they’re all blended in.

Pour the fluffy mixture into a square 9x9 dish that’s been greased. Smooth out the top and leave it to set for 6 hours or overnight.

After it’s set, sprinkle powdered sugar on the top and cut it into squares.
