Meatballs with Potatoes (Print Version)

# Ingredients:

→ Meatballs

01 - 450g of minced beef (or a mix of pork and beef)
02 - 1 egg
03 - 2 tablespoons of olive oil for frying
04 - 1/4 cup of Parmesan, grated finely
05 - Salt as needed
06 - 1/2 cup of breadcrumbs
07 - A sprinkle of black pepper
08 - 2 garlic cloves, chopped very small
09 - 1 teaspoon of dried oregano

→ Potatoes

10 - 680g of halved baby potatoes
11 - 3 tablespoons of olive oil
12 - A pinch of black pepper
13 - Salt, to taste
14 - 1 teaspoon of thyme (dry or fresh sprigs if preferred)
15 - 1 small onion, cut into quarters

→ Optional Sauce

16 - 1 teaspoon of Dijon mustard
17 - 1/2 cup of beef stock
18 - A tablespoon of soy sauce

# Instructions:

01 - In a mixing bowl, combine the meat, breadcrumbs, egg, Parmesan, garlic, oregano, salt, and pepper. Shape into roughly 12 to 15 balls, about 1.5 inches wide. Heat the olive oil in a big pan over medium heat and sear the meatballs until browned on all sides, which will take around 6-8 minutes. They don’t have to be fully done. Set them aside.
02 - Turn your oven on to 200°C (400°F). Toss the potato halves and onion pieces in olive oil, thyme, salt, and pepper before spreading them out on a baking pan. Roast for roughly 20 minutes.
03 - After the potatoes have roasted for 20 minutes, pull out the baking tray. Arrange the seared meatballs between the potatoes on the tray. If you’d like to use the sauce, mix up the beef stock, soy sauce, and Dijon in a small bowl, then drizzle it over everything. Pop the tray back in and roast for another 15-20 minutes, or until the potatoes are soft and the meatballs are thoroughly cooked.
04 - Scatter fresh parsley or thyme on top and serve warm. You can plate it up or set the entire tray on the table for easy serving.
