Set your oven to 400°F (200°C) and let it warm up.

Use a fork to poke holes in the sweet potatoes, then pop them on a baking sheet. Bake for 45-60 minutes until soft.

While waiting for the potatoes, cook ground turkey or beef in a skillet over medium heat. Cook until browned. Drain any fat, then mix in taco seasoning as per the packet instructions. For a veggie option, heat black beans in a pot.

When the sweet potatoes are done, let them cool for a bit. Slice them open lengthwise and scoop out some of the center to make room for the stuffing.

Fill each sweet potato with the cooked meat (or beans), corn, diced tomatoes, black beans, and cheese.

Put the filled sweet potatoes back in the oven. Heat for about 5-10 minutes until the cheese is gooey and melted.

Finish by adding a spoonful of sour cream or yogurt. Sprinkle with cilantro and add optional avocado slices before digging in.
