Taco Sweet Potatoes (Print Version)

# Ingredients:

01 - 1 packet of taco seasoning
02 - 1 pound of ground turkey or beef
03 - 2 big sweet potatoes
04 - 1 cup of canned corn
05 - 1 cup of shredded cheese
06 - 1 cup of rinsed and drained black beans
07 - Sour cream or plain Greek yogurt for the top
08 - Fresh cilantro, chopped, for sprinkling
09 - Avocado slices, optional
10 - 1 cup of diced tomatoes

# Instructions:

01 - Set your oven to 400°F (200°C) and let it warm up.
02 - Use a fork to poke holes in the sweet potatoes, then pop them on a baking sheet. Bake for 45-60 minutes until soft.
03 - While waiting for the potatoes, cook ground turkey or beef in a skillet over medium heat. Cook until browned. Drain any fat, then mix in taco seasoning as per the packet instructions. For a veggie option, heat black beans in a pot.
04 - When the sweet potatoes are done, let them cool for a bit. Slice them open lengthwise and scoop out some of the center to make room for the stuffing.
05 - Fill each sweet potato with the cooked meat (or beans), corn, diced tomatoes, black beans, and cheese.
06 - Put the filled sweet potatoes back in the oven. Heat for about 5-10 minutes until the cheese is gooey and melted.
07 - Finish by adding a spoonful of sour cream or yogurt. Sprinkle with cilantro and add optional avocado slices before digging in.
