Set your oven temperature to 400°F (200°C). Poke the sweet potatoes with a fork a few times, then lay them out on a baking pan. Let them cook in the oven for 45-60 minutes, or until a fork slides in easily. After baking, give them a few minutes to cool, slice them lengthwise, and take out some of the insides to form a hollow for stuffing.

In a medium bowl, mix together the sweet potato you scooped out, Greek yogurt, goat cheese, and a bit of salt and pepper. Stir it all up until it’s smooth.

Generously fill the hollowed sweet potato skins with the creamy mixture. Heat a small frying pan on medium, then toast the pecans for 3-5 minutes while watching closely. Pour some honey onto the stuffed sweet potatoes and sprinkle the pecans over them.

Sprinkle fresh chopped chives for a bright look and added taste. Serve these stuffed potatoes warm on their own or as a side dish!
