Sweet Potatoes Delight (Print Version)

# Ingredients:

01 - 4 medium-sized sweet potatoes
02 - 1/4 cup chopped toasted pecans
03 - 1 cup softened goat cheese
04 - 2 tablespoons of honey
05 - 1/4 cup plain Greek yogurt
06 - A dash of salt and pepper
07 - Fresh chopped chives for garnish

# Instructions:

01 - Set your oven temperature to 400°F (200°C). Poke the sweet potatoes with a fork a few times, then lay them out on a baking pan. Let them cook in the oven for 45-60 minutes, or until a fork slides in easily. After baking, give them a few minutes to cool, slice them lengthwise, and take out some of the insides to form a hollow for stuffing.
02 - In a medium bowl, mix together the sweet potato you scooped out, Greek yogurt, goat cheese, and a bit of salt and pepper. Stir it all up until it’s smooth.
03 - Generously fill the hollowed sweet potato skins with the creamy mixture. Heat a small frying pan on medium, then toast the pecans for 3-5 minutes while watching closely. Pour some honey onto the stuffed sweet potatoes and sprinkle the pecans over them.
04 - Sprinkle fresh chopped chives for a bright look and added taste. Serve these stuffed potatoes warm on their own or as a side dish!
